Sweet Summer Arugula Salad

Makes 4 servings

  • 10 cups arugula
  • 3 cups seedless watermelon, cubed into ¾
  • ¼ small red onion
  • 1/3 cup of parmesan slivers


  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp kosher salt
  • ½ teaspoon freshly ground black pepper


  1. Dice watermelon into ¾ inch pieces and thinly slice red onion. Set it aside with the arugula.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper to prepare the dressing.
  3. Toss all ingredients together and sprinkle on parmesan cheese.
