Sweet Summer Arugula Salad

Ingredients
Makes 4 servings
- 10 cups arugula
- 3 cups seedless watermelon, cubed into ¾
- ¼ small red onion
- 1/3 cup of parmesan slivers
Dressing
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tsp kosher salt
- ½ teaspoon freshly ground black pepper
Preparation
- Dice watermelon into ¾ inch pieces and thinly slice red onion. Set it aside with the arugula.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper to prepare the dressing.
- Toss all ingredients together and sprinkle on parmesan cheese.
